Sakinalu is the pride of every Telangana kitchen at Sankranti, those lovely spirals of rice flour speckled with sesame seeds. I soak and grind the rice myself, mix in ajwain and til, and pipe each ring slowly onto my palm before it goes into the oil.
When the festival comes, the whole street smells of fresh sakinalu and I think of my own ammamma. One bite and you will hear that gentle crunch, the sound of a true Telangana morning.
