Ariselu is the Sankranti sweet closest to my heart, soft discs of rice flour and melted jaggery, fried until they turn deep and glossy. The jaggery must reach just the right thread, and I pat each disc on a greased leaf before it meets the oil.
Making ariselu takes patience and a few helping hands, the way it always did in our village courtyard. Sprinkled with sesame, they carry the taste of harvest time and family.
